Mint (Mentha species) There are also many delicious soup and dessert recipes that call for this gloriously fragrant herb. It is a perennial and consists of stalks with bright green, saw-toothed leaves. It can grow to 2 feet in height, but if you harvest the leaves frequently and pinch off the tops, you will encourage it to stay low and bushy. Mint is very easy to grow and will germinate 10–15 days after planting. You can start harvesting the leaves about eight weeks from germination.
